Ingredients (in order of use):

For the Salad:

  • 2 bunches lacinato kale, stems removed and chopped (about 10 cups loosely packed)
  • 1 cup parsley leaves, coarsely chopped
  • ½ cup shaved Parmesan cheese
  • ¼ cup Marcona almonds or whole regular almonds


For the dressing (makes double the amount needed — reserve extra in fridge):

    • ½ cup olive oil

    • 4 tablespoons fresh lemon juice

    • 4 teaspoons fresh honey

    • 2 teaspoons whole grain mustard

    • 1 small garlic clove, finely grated with a microplane or finely chopped

    • ½ teaspoon kosher salt or flaky sea salt

    • ¼ teaspoon ground black pepper

Instructions:


  1. Place the chopped kale in a large bowl.
    Using your hands, massage the kale, squeezing it together to soften. Add the parsley and toss to combine.
  2. In a mason jar, combine the olive oil, lemon juice, honey, mustard, garlic, salt, and pepper.
  3. Seal the jar and shake vigorously until the dressing is emulsified.
  4. Pour about half the dressing over the kale and parsley. Toss thoroughly to coat.
  5. Add the shaved Parmesan and almonds.
    Toss again to distribute.
  6. Taste and adjust seasoning.
  7. Store the extra dressing in the mason jar in the refrigerator for up to 1 week.
